It seems unbelievable, but Zátiší has been pampering its guests with great food, service, and experiences for 35 years. Which memories stand out to you?

The fast pace of the 90s.

After the Velvet Revolution in November 1989, tourists began discovering Prague. One of them was thirty-year-old Sanjiv Suri. He had spent more than 12 years working in major hotels and had just taken a few months off. His girlfriend was sent to the embassy in Prague, so he came with her, and immediately fell in love with the city. He decided to stay and open a café where he could enjoy food prepared to the standard he was used to.

In March 1991, Sanjiv Suri founded Zátiší, and on May 19 he opened Café Museum near the National Museum. His inseparable business partner became Dana Krautstenglová, a woman who was just turning fifty and chose the uncharted waters of the restaurant business with an enthusiastic Indian over the certainty of retirement.

 

Milestones of Zátiší Group

The café’s meteoric success was evident from the line forming outside and Dana Krautstenglová used to adjust prices based on the length. A coffee cost 4.20 CZK (later 4.80 CZK), and the most expensive sandwich was 5.80 CZK. It soon became clear that people wanted not only good food but also a place to sit and enjoy it, so Sanjiv Suri and Dana opened V Zátiší on July 29, 1991, in Liliová Street (and yes, V Zátiší has been in the very same location for 35 years). The following year, they opened restaurant Parnas on Smetanovo nábřeží. The views of the Vltava River, Charles Bridge, Prague Castle, and Petřín Hill attracted tourists, while locals appreciated the international cuisine, extensive selection of foreign wines, and discreet service.

Sanjiv Suri moved even closer to the water in 1994, when he opened Corona Bar on Novotného lávka. The trendy venue was transformed into the popular restaurant Mlýnec in 2000, only to be swept away two years later by the 500-year flood. 
 

Two years earlier, in 1998, a restaurant with one of the most beautiful views in Prague opened in the Bellevue Palace on Smetanovo nábřeží. Restaurant Bellevue replaced Parnas, which had closed in 1997.
That same year, Sanjiv Suri also launched Zátiší Catering, which for the past 28 years has been providing events in the Czech Republic and across whole Europe, from intimate celebrations, weddings, and corporate parties to international political meetings and motor races.
 

Expansion in the new millennium

The grand celebrations welcoming the year 2000 seemed to foreshadow the dynamic growth of Zátiší Group. In 2007, the company became the exclusive caterer for the neo-renaissance Žofín Palace on Slovanský ostrov. Restaurant Žofín Garden became a favorite spot among Prague locals for family brunches and celebrations. However, after the COVID restrictions in the summer of 2020, the restaurant didn’t reopen following the winter season.
 

During the economic crisis in the autumn of 2008, Sanjiv Suri launched the Fresh & Tasty project, which aims to improve meals for schoolchildren. In 2009, he opened the first school cafeteria at International School of Prague. Six years later, adults finally got their turn as well. Fresh & Tasty opened its first employee canteen, Amaroun Café, at Google company. Since then, many more canteens have opened in different parts of Prague.

The renovation of the Škoda Museum created the need for a stylish café. Since 2012, Zátiší Group has been operating Café | Restaurant Václav there, as well as seasonal café at the Birth House of Ferdinand Porsche in Vratislavice nad Nisou. 
 

In February 2017, the café Café Rudolfinum opened under the management of Zátiší Group in the newly renovated Rudolfinum. Two concert seasons were brought to an end by the COVID-19 pandemic.

In 2018, a brand-new Zátiší Food Truck rolled into Zátiší Catering events, offering on-the-go snacks. Guests were also delighted by a juice bike, where they could pedal to squeeze fresh juice, also by UV-glowing food, rolled ice cream, and the concept of a single bowl along with edible cones.
In 2018, Prague saw the emergence of Manifesto Market – a foodie hotspot built on a former brownfield site. At the Christmas markets in Florenc, visitors loved the selection of dishes from Mlýnec, V Zátiší, Bellevue, and Žofín Garden, thanks to the “Miska by Zátiší” concept.

At the beginning of 2020, the restaurant Bellevue changed its address after 22 years. It moved just a few metres closer to Mlýnec, into Pachta Palace, due to a complete renovation of the building. In the spring of 2020, the COVID-19 pandemic brought the world to a standstill, closing schools and restaurants, cancelling public events, and sending employees to work from home. A 98% drop in revenue was addressed by the team at Zátiší Group with their characteristic enthusiasm and creativity: within 48 hours, they launched an e-shop with food delivery.
 

A new world and new challenges after 30 years

After the post-COVID restart, Sanjiv Suri introduced the Karlín bistro Pop-up by Zátiší, where new concepts and products were tested in 2024. People wanted to have fun and keep discovering something new.
 

In 2025, the restaurant V Zátiší received a new interior design. The existing seasonal menu was complemented by a new concept called the “Slavic Compass,” featuring dishes inspired by place, history, and (largely forgotten) ingredients.

In 2026, Zátiší Group celebrates 35 years on the Czech culinary scene. Its remarkable history is reflected in humorous, joyful, and warm memories, while the future is welcomed by the new venue Bursa by Zátiší Group at the Holešovice Market. The historic building of the original Meat Exchange from 1895 has been fully renovated and is reopening, where visitors can enjoy beer, grilled meats, and other specialties.
 

In 2028, you may look forward to the reopening of the iconic restaurant Bellevue. Zátiší Group is maturing like fine wine, and it’s only up to you who you choose to enjoy it with.
